I grew up in California and lived in Texas for over 11 years, so I know good Mexican food. When I first moved to Cuenca over a decade ago, there was just one Mexican restaurant. Now, there are over 20. While most serve good food, few capture the true taste of Mexican cuisine I remember. Often, it feels like an Ecuadorian take on Mexican food.

Mexico boasts 32 states, each with its own unique culinary traditions. Chula Birria, the new restaurant I visited, features authentic family recipes from Oaxaca, a southern state in Mexico. Many North Americans are familiar with Tex-Mex, but not the rich gastronomy of other regions. Here’s your chance to explore it.

During the pandemic, sisters Guzman started cooking and delivering Mexican food from home. Post-COVID, they opened their first restaurant.

The first thing you’ll notice (besides the inviting open interior) is the concise menu. The restaurant’s goal is to offer special, elaborately prepared dishes, each requiring complex and meticulous preparation. The table settings feature black plates with colorful, flower-garnished dishes.

Head Chef Jessy has mastered the Oaxacan family recipes, cooking with the family since childhood. At Chula Birria, she has expanded and refined these recipes, offering a varied and polished gastronomic experience.

The house specialty is “Quesabirrias” – a stew made from a special cut of beef, simmered for hours and melted with mozzarella cheese, served in corn tortillas.
